FIRST EDITION. Significant cookbook, the first written by an African American professional chef. Estes, born into slavery in Tennessee, went on to cook for Presidents Harrison and Cleveland, European royalty, and was a chief chef for Pullman Private Car Service. Rare. Culinary America, 786
